Rocchi’s quality comes to life even before the product has reached the plant.
It can be found in the meticulous work of the Selectors, who look for the best local olive oil mills, and in the painstaking care of the Tasters, who look into the details of each olive oil, chosen from dozens of different varietals and cultivars. Only those that meet Rocchi’s standards are approved for use in the company’s production process.
The selected cultivars are stored in a protected area at constant temperature 365 days a year, to make sure their precious properties are not lost with time. A high-tech system, but a typically artisanal approach, in which every step of the process is consistently monitored by experienced staff.
